Minestrone Soup

This vegan and gluten free Minestrone Soup is a delicious and nutritious twist on the classic Italian dish.
- 5 cups vegetable broth
- 1 large white onion chopped
- 3 tomatoes chopped
- 2 tomatoes minced
- 1/2 zucchini cut into 1/2 small pieces
- 1 carrot cut into small pieces
- 1 can chick peas drained (save liquid from chick peas for aquafaba*)
- 1 can red kidney beans drained
- 1/4 tsp red pepper flakes
- 1 tsp dried oregano
- 1/2 cup fresh basil chopped
- 1/2 tsp salt and pepper each
- 1 cup of gluten free pasta of choice

Instructions
- Place all ingredients in a large pot and bring to a boil.
- Reduce heat and let simmer for 20 mins
