This vegan and gluten free Minestrone Soup is a delicious and nutritious twist on the classic Italian dish.

Ingredients

  • 5 cups vegetable broth
  • 1 large white onion chopped
  • 3 tomatoes chopped
  • 2 tomatoes minced
  • 1/2 zucchini cut into 1/2 small pieces
  • 1 carrot cut into small pieces
  • 1 can chick peas drained (save liquid from chick peas for aquafaba*)
  • 1 can red kidney beans drained
  • 1/4 tsp red pepper flakes
  • 1 tsp dried oregano
  • 1/2 cup fresh basil chopped
  • 1/2 tsp salt and pepper each
  • 1 cup of gluten free pasta of choice
