  • vegan mayonaise, aioli sauce or other dips (optional)

Instructions

  • Preheat the oven to 375 °F.
  • Wash the potatoes well and pat them dry. Remove any blemishes or potato eyes.
  • Run a wooden skewer through each potato and cut each potato into a spiral using a small, sharp knife by turning the potato as you cut or place the potato on two skewers and cut through until you meet the skewers and then flip the potato over and repeat, this will create a spiral effect, (the thinner you cut the spirals, the crispier they will be).
  • You can also use a hand spiraler.
  • Once spiraled gently loosen up the potato to create some space between the spiral’s and place in your prepared baking dish.
  • In a bowl, pour some olive oil and brush the potatoes with it.
  • Bake the spiraled potatoes for 20 minutes. Then flip them over, brush with the other side with olive oil and bake for another 10-15 minutes until the potatoes are crispy.
  • Remove them from the oven and sprinkle with coarse sea salt to taste. Serve with aioli, vegan mayonnaise or dips of choice.
  • Enjoy!

*you don't have to peel the potatoes but if you do scrub them well first and cut away blemishes and keep the peel to make homemade potato chips. You won't be disappointed and you won't be wasting food!
