Vegan Egg Drop Soup ~ Tomato Based

Savor the comforting warmth of our Vegan Egg Drop Soup with a delightful twist – a rich and savory tomato base. - 2 1/2 teaspoons sea salt
- 1 small yellow onion, sliced into strips
- 2 garlic cloves, minced
- 1 1" piece of ginger, minced
- 1 green onion, chopped
- 12 oz gluten free ramen
- 2 tablespoons light tasting olive oil
- 1 28oz can of diced tomatoes
- 4 cups low sodium vegetable broth
- 3/4 - 1 cup "Just Egg" replacer
- pinch of freshly grund white pepper
- 3 tablespoon brown sugar
- toasted sesame oil or chili oil
- soy sauce for serving

Instructions
- In a small Dutch oven or large saucepan fill with water 3/4 full , season with 1 teaspoon of the salt and bring to a boil.
- While water comes to a boil, prep your vegetables.
- When water is boiled add your ramen and cooked until tender.
- Drain the ramen and rinse under cold water and set aside.
- Using the same pot heat the olive oil. Add the onion and cook until translucent. Add the garlic and ginger and cook until fragrant.
- Add the can of tomatoes and the vegetable broth. Reduce heat to medium, cover pot with lid and cook until flavors come together. approximately 1- 15 minutes.
- Meanwhile whisk 1 teaspoon salt and the pepper into the "eggs" into a measuring cup with a pouring spout.
- Uncover the broth and stir in the sugar and salt if needed. The broth should be slightly sweet but a little tart.
- Increase the heat and bring the soup to a boil. Very slowly pour the egg mixture into the broth. Do not stir. Allow t cook for 1 minute.
- Remove the pot from the stove.
- Rinse the noodles again under water to loosen. Divide the noodle amongst four bowls and ladle the soup over the noodles. Drizzle the soup with the sesame or chili oil, soy sauce and top with green onions.
