Strawberry Lemonade Concentrate
Homemade strawberry lemonade concentrate offers a refreshing and flavorful twist on a classic drink, packed with the natural goodness of strawberries and lemons. It's a healthier alternative to store-bought concentrates, as it typically contains fewer additives and preservatives. Plus, strawberries are rich in vitamin C and antioxidants, while lemons provide vitamin C and aid digestion. Enjoying this homemade treat can be a delicious way to hydrate and boost your intake of essential nutrients.
- 6 cups organic fresh strawberries
- 6 cups organic cane sugar
- 4 cups freshly squeezed organic lemon juice
Instructions
- place the washed and hulled strawberries in your Vitamix blender and puree
- add the pureed strawberries to a medium sized sauce pan
- add the lemon juice and sugar to the puree and turn the heat to medium
- simmer your mixture stirring occasionally and heat to 190 degrees F, do not boil
- scoop off the foam, ladle the concentrate into your hot sterilized pint size jar leaving 1/4 inch headspace
- wipe the rim with a cloth dipped in vinegar, add the seal and ring, tighten to finger tight.
- place jars in your water bath canner and when canner is full bring the water to a boil and allow to process for 15 minutes
- turn off the heat and allow the jars to sit in the canner for 5 minutes before removing
- place jars on your counter undisturbed for 24 hours, wipe jars down, check for seal and store
You can keep the concentrate in bottles in the fridge to use without canning. Use un-canned concentrate within two weeks.
To make your Strawberry Lemonade drink add 1 part concentrate to 3 parts water. Add ice cubes, slices of lemon and/or fresh sliced strawberries and enjoy!
For an even healthier twist use coconut water in place of water or try it with carbonated/sparkling water.
