Blueberry Chia Jam

- 300 grams organic blueberries
- juice from 1 lemon
- 2 tablespoons chia seeds
- 1-2 tablespoons maple syrup or more to taste
Instructions
- In a small saucepan over low heat add your washed organic blueberries along with the lemon juice and the maple syrup.
- Using a fork squish the blueberries down to mash them.
- Let it simmer for 5-10 mins until the juices have released and it has turned a rich purple color.
- Remove the pan from the heat and stir in the chia seeds.
- Allow the mixture to sit until it becomes a thick texture.
- The jam can be stored in the fridge for up to a week.
Enjoy on toast, crackers, over ice cream, cheesecake or on overnight oats.
