Mango with Coconut Rice
Mango with coconut rice dessert is a delightful treat that combines the sweet and juicy flavor of mangoes with the creamy richness of coconut-infused rice. Mangoes offer numerous health benefits, including boosting the immune system, supporting digestive health, promoting skin health, and providing essential vitamins and minerals such as vitamin C, vitamin A, and potassium. Rich in antioxidants, mangoes may also help protect against chronic diseases and improve overall wellbeing.
- 2 cups uncooked sticky rice
- 1 14 oz can of coconut milk
- 1/2 cup granulated sugar
- 1 teaspoon of vanilla
- 20 oz diced frozen mango
Instructions
- Place the mango in a bowl and allow it to thaw at room temperature.
- Next cook your rice in your rice cooker according to the directions.
- While the rice is cooking pour the coconut milk in a medium sized saucepan and bring it to a simmer, stirring constantly.
- Add the sugar, salt and vanilla and stir until sugar dissolves.
- Remove the pan from the stove and measure out 1 cup of the coconut milk sauce and set it aside.
- Place the remainder of the sauce in the fridge until ready to use.
- When the rice is finished cooking place it in a medium sized bowl and pour the 1 cup of reserved coconut milk over it and stir until combined.
- Let the coconut rice sit for 15 minutes to 3 hours before serving. You can keep it at room temperature or place in the fridge.
- To serve, scoop some of the coconut rice into a bowl, pour some of the refrigerated coconut milk over the rice and then top it with some mango. Enjoy!
