Vegan Ham Roast with Maple Glaze

Ingredients

Ham Roast

  • 19 oz can chickpeas, drained (keep the liquid from the peas "aquafaba" for future baking)
  • 3/4 cup vegan chicken broth
  • 2 tablespoons olive oil
  • 2 tablespoons nutritional yeast
  • 1/4 cup can tomatoes drained
  • 1 tablespoon maple syrup
  • 1 teaspoon paprika
  • 1/4 teaspoon ground cloves
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 3/4 cup gluten free flour
  • 1/4 psyllium husk powder
  • 3-4 cups more of chicken or vegetable broth, for steaming

Maple Glaze

  • 4 tablespoons melted vegan margarine
  • 1/2 cup brown sugar, lightly packed
  • 1/2 cup pure maple syrup
  • 1 tablespoon dijon mustard
  • 1/4 teaspoon ground cinnamon

For Roasting

  • whole cloves, approximately 20 (optional)
  • canned or fresh pineapple rings, about 10-12 (optional)

Ingredients

Ham Roast

  • 1/4 psyllium husk powder
  • 3-4 cups more of chicken or vegetable broth, for steaming

Maple Glaze

  • 4 tablespoons melted vegan margarine
  • 1/2 cup brown sugar, lightly packed
  • 1/2 cup pure maple syrup
  • 1 tablespoon dijon mustard
  • 1/4 teaspoon ground cinnamon

For Roasting

  • canned or fresh pineapple rings, about 10-12 (optional)

Instructions

  1. In a Vitamix blender or food processor, add drained chick peas, broth olive oil nutritional yeast, tomatoes, maple syrup, paprika, cloves, onion powder and garlic powder and blend or process until smooth.
  2. Transfer the blended mixture to a large mixing bowl.
  3. Add the gluten free flour, psyllium husk to wet mixture and stir with a spoon until you need to use your hands and mix unti it starts to come together. Sprinkle a small amount of flour on a clean surface and knead about 10 times.
  4. Shape the dough into a loaf.
  5. Using a large pot with steaming basket, place the loaf inside the basket with about 3 cups of the broth on the bottom for steaming the loaf. Do not let the ham sit in the broth.
  6. Cover, bring to a boil, then reduce heat so ites simmering but not at a rolling boil.
  7. Steam for an hour and add broth if it gets low.
  8. Remove the pot from the stove and remove lid and allow the loaf to cool for a few minutes.
  9. Preheat your oven to 425 degrees F.
  10. In a medium size bowl whisk all the glaze ingredients together and set aside.
  11. Place the steamed ham in a casserole dish and score it in a criss cross pattern. You can place whole cloves in the diamonds if you wish.
  12. Pour half of the glaze over the ham and place the pineapple rings around the roast.
  13. Place in the oven to roast for 30 minutes. Checking it every 10 minutes and baste with more glaze. Try to keep some glaze to pour over ham just before serving.
  14. When completed cooking allow to cool for 15 minutes, remove the cloves, slice and serve!
