Vegan Cashew Yogurt is creamy, smooth, and filled with probiotics, making it a delicious dairy-free alternative! Cashews have a natural sweetness and richness, making this yogurt a great base for breakfast or snacks.
- 2 cups raw cashews
- 1/2 cups filtered water
- pinch of sea salt
- 5 capsules probiotics (about 1/2 teaspoon)

Instructions:
- soak your cashews in fresh water overnight, approx. 24 hours
- drain and rinse your cashews
- add the cashews and the filtered water to a high powered blender like the Vitamix and blend until smooth, approximately 3-4 minutes
- pour cashew yogurt into a clean dry glass bowl or jar
- open the probiotic capsules and pour the powder into the yogurt, using a silicone, plastic or wooden spoon mix the powder into the cashew yogurt
- cover your jar with cheesecloth and using an elastic to keep the cheesecloth on tight
- place your jar in your unheated oven with the light on for 24-48 hours
- after 24 hours check your yogurt for tanginess, if not tangy enough leave longer in the oven
- once it is done stir your yogurt and place a lid on and keep it in the fridge, it will thicken as it sits
- you can sweeten your yogurt with maple syrup, honey or sweetener of your choice, add vanilla or fruit etc.
- your yogurt should last in the fridge for about two weeks
- for a thicker Greek like yogurt, you can place the yogurt in a cheesecloth, tie it and allow to sit over a bowl for a few hours to allow the liquid to drain off to create a thicker yogurt
- if you decide to leave it to drain for 24 hours or more you will have a vegan cheese that you can add nutritional yeast, herbs and flavorings of your choice
*make sure to never use metal utensils when making your yogurt as the metals with destroy the beneficial probiotics
