Ingredients

Dry Ingredients:

2 cups gluten free oats

1/2 cup gluten free brewers yeast

1/2 teaspoon salt

1 teaspoon cinnamon

2 cups shredded coconut

2 cups ground almonds

1/2 cup brown sugar lightly packed

2 tablespoons flax seed

2 teaspoons baking soda

1 cup all purpose gluten free four or gluten free oat flour

1/2 cup hemp hearts

1 cups gluten and dairy free chocolate chunks or chips

Wet Ingredients:

1 cup melted organic coconut oil, melted

1.5 cups almond or peanut butter, slightly melted

2 teaspoons vanilla extract

6 eggs, room temperature (to prevent coconut oil from solidifying from cold eggs)

1/2 cup honey

Instructions

This recipe does make a lot of cookies. It is recommended to enjoy up to 3 cookies approximately half an hour before nursing. When I make these cookies I will make an extra batch of the dry ingredients and place the dry mixture in a very large mason jar to have it ready to make the next batch.

  • Preheat your oven to 350 degrees Fahrenheit and make sure the cooking rack is in the center of the oven.
  • In a standing mixer with paddle attachment mix all the wet ingredients together and then add all the dry ingredients and mix well.
  • Place the mixture covered in the fridge for up to an hour for easier handling but this is not necessary.
  • Using a teaspoon, scoop teaspoonfuls of mixture onto a parchment covered cookie sheet. Leaving about 1/2" between cookies.
  • Place on center rack of oven and bake for 12-13 mins.
  • Remove the cookie sheet from the oven and let the cookies sit for 5 minutes before removing the cookies and placing them on a wire rack to cool.
