Double Chocolate & Raison Date & Walnut Energy Balls

These no-bake energy balls are not only delicious but also provide a good mix of carbohydrates, healthy fats, and protein. They make for a convenient snack on the go or a pre- or post-workout fuel option.
Oat Base
- 4 cups gluten free oats
- 2 1/2 cups nut butter of your choice
- 1/2 cup organic maple syrup
Raison Dates & Walnuts
- 1 cup raisons
- 1 cup chopped medjool dates
- 1 cup chopped walnuts
Double chocolate
- 4 tablespoons Organic Cocoa
- 1 cup vegan gluten-free mini chocolate chips
- 1 cup coconut flakes

Instructions
Base
- Start by making your base, in a medium sized bowl add your gluten-free oats.
- In a separate microwaveable bowl soften your nut butter (this will only take up to 30 seconds, depending on the microwave you use) then place it in your Vitamix Blender (or any high powered blender) with the maple syrup and blend until smooth.
- Add the nut butter mixture to your oat base.
- Now add the flavor ingredients of your choice to the base mixture and stir to blend well.
- Roll the mixture into balls about 1 inch and enjoy!
- Some ingredients may need to be adjusted for added or lessened moisture depending on the type of oat flakes you use.
- Keep in a sealed container on the counter for a few days or you can just place them straight away in the fridge to last longer.
