- 6 pounds apples
- 3/4 cup water
- 3/4 cup brown sugar (or more to taste)
- 1 teaspoon cinnamon (or more to taste)

- Wash your apples well and peel and core them. Set your apple peels aside to make apple cider vinegar
- Slice your apples and set aside in a large bowl.
- In a large saucepan add the sliced apples and the water over medium high heat.
- Bring to a boil and reduce heat to simmer.
- Allow the apples to simmer stirring often to avoid scorching your apples.
- Once the apples reach a consistency you like you can remove them from the heat.
- Depending on how you like your apple sauce you can just use your spoon to mash up most of the apples and leave some chunks or you can add them to your Vitamix and blend until smooth.
- If your not using the blender you can add the sugar and cinnamon to the apples while you are stirring and breaking them up. If using the blender you can add the sugar and cinnamon to the blender with the apples.
- Pour your hot apple sauce into hot sterilized jars, leaving 1/2 inch at top of jar.
- Remove any air bubbles using a chopstick down the insides of the jar.
- Wipe the rim of each jar with vinegar on a cloth and place your canning seal on top of the jar and add the ring only to finger tight.
- Place your hot jars into your hot water bath and bring your water to a boil and allow to boil for 20 mins for 500 ml jars.
- Make sure each jar is covered by 1 -2 inches of water.
- After the time is up turn off the heat and allow to sit for 5 minutes in the water bath canner and then remove the jars from water, do not tilt the jars and allow them to sit on the counter undisturbed for 24 hours. After 24 hours check that each jar has sealed, remove the rings and wipe down each jar with hot soapy water, label and place in your storage for later use. Use within one year. Any unsealed jar can be placed in your refrigerator and consumed within a couple weeks.
