Sweet Thai chili sauce is incredibly versatile and can be used in various ways: such as dipping sauce, marinade, condiment or salad dressing. Sweet Thai chili sauce is a delightful addition to many dishes, offering a perfect balance of sweet, spicy, and tangy flavors.
- 1 cup water
- 1 cup rice vinegar
- 1 cup granulated sugar
- 2 teaspoons fresh ginger root, minced
- 2 teaspoons hot chili pepper, minced
- 1 teaspoon fresh garlic, minced
- 2 teaspoons ketchup
- 2 teaspoons cornstarch
- 1 tablespoon water, as needed

- Pour water and vinegar into a saucepan; bring to a boil over high heat.
- When it reaches boil stir in sugar, ginger, chili pepper, ketchup, and the garlic. Let it simmer for 5 minutes.
- While its simmering place the cornstarch in a small bowl; mix in the water until it's smooth.
- Whisk the cornstarch mixture into chili sauce.
- Remove the saucepan from the stove and pour the very hot mixture into a sterilized canning jar with a new seal and lid or you can place the cooled mixture into a regular jar or container and refrigerate it until its needed.
