- 1/2 cup coconut oil,softened
- 3/4 cup creamy peanut butter
- 1/2 cup cane sugar or granulated sugar
- 1/2 cup brown sugar
- 2 tablespoon non dairy milk
- 1 teaspoon vanilla extract
- 1 1/4 cup gluten free flour
- 1 tsp xanthan gum (if your flour doesn't already have it)
- 3/4 teaspoon baking soda
- 1/2 teaspoon baking powder
- 2 tablespoon corn starch
- 1/4 teaspoon salt

Instructions
- In a large mixing bowl cream together the coconut oil and sugars.
- Mix in the peanut butter until smooth.
- Add remaining ingredients except the flour and mix well.
- Once it is all mixed fold in the flour, being careful not to over mix.
- Roll dough into small balls then roll in sugar.
- Place on a parchment lined cookie sheet. About 1" apart.
- Gently press down each ball with a fork dipped in water.
- Bake in middle of oven for 10-12 minutes or until golden.
- Remove from oven and let cool for a bit before transferring to rack to cool completely.
- Enjoy with a nice glass of non dairy milk!
