Ingredients

  • 1/2 cup coconut oil,softened
  • 3/4 cup creamy peanut butter
  • 1/2 cup cane sugar or granulated sugar
  • 1/2 cup brown sugar
  • 2 tablespoon non dairy milk
  • 1 teaspoon vanilla extract
  • 1 1/4 cup gluten free flour
  • 1 tsp xanthan gum (if your flour doesn't already have it)
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 2 tablespoon corn starch
  • 1/4 teaspoon salt

Instructions

  1. In a large mixing bowl cream together the coconut oil and sugars.
  2. Mix in the peanut butter until smooth.
  3. Add remaining ingredients except the flour and mix well.
  4. Once it is all mixed fold in the flour, being careful not to over mix.
  5. Roll dough into small balls then roll in sugar.
  6. Place on a parchment lined cookie sheet. About 1" apart.
  7. Gently press down each ball with a fork dipped in water.
  8. Bake in middle of oven for 10-12 minutes or until golden.
  9. Remove from oven and let cool for a bit before transferring to rack to cool completely.
  10. Enjoy with a nice glass of non dairy milk!
