Creamy Mushroom Sauce

- 1 teaspoon Italian Seasoning
- 2 tablespoon vegan margarine
- 3 teaspoons minced garlic
- 8 oz mushrooms, sliced
- 1/2 cup vegetable broth
- 1 cup non dairy heavy cream
- 1 teaspoon dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon cracked black pepper
- 2-3 tablespoons vegan parmesan cheese (optional)
Instructions
- In a large cast iron skillet over medium high heat add the butter and allow to melt.
- Once melted add in the garlic and mushrooms and sauté 2-3 minutes until mushrooms are browned and garlic is fragrant.
- Stir in the vegetable or vegan chicken broth, heavy cream, Dijon mustard, salt and pepper and bring to a boil.
- Cook for two minutes and them remove from heat.
- If usingvegan parmesan cheese stir it into the sauce now.
- Serve with your favorite gluten free pasta, over cooked tofu or vegetables of choice.
