  • 1 teaspoon Italian Seasoning
  • 2 tablespoon vegan margarine
  • 3 teaspoons minced garlic
  • 8 oz mushrooms, sliced
  • 1/2 cup vegetable broth
  • 1 cup non dairy heavy cream
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon cracked black pepper
  • 2-3 tablespoons vegan parmesan cheese (optional)

Instructions

  1. In a large cast iron skillet over medium high heat add the butter and allow to melt.
  2. Once melted add in the garlic and mushrooms and sauté 2-3 minutes until mushrooms are browned and garlic is fragrant.
  3. Stir in the vegetable or vegan chicken broth, heavy cream, Dijon mustard, salt and pepper and bring to a boil.
  4. Cook for two minutes and them remove from heat.
  5. If usingvegan parmesan cheese stir it into the sauce now.
  6. Serve with your favorite gluten free pasta, over cooked tofu or vegetables of choice.
