Nut and Date Energy Balls

These little power balls are loaded with both protein and flavor. Perfect as a healthy grab and go breakfast or snack.

Ingredients

  • 1 cup raw almonds
  • 1 cup walnuts
  • 1 cup dry dates soaked in hot water for 15 minutes, then drain
  • 6 Medjool dates pitted
  • 1/4 tsp vanilla
  • 1 cup shredded coconut

Instructions

  1. Place the almonds and walnuts in your high powered blender container (I prefer my Vitamix) and secure the lid.
  2. Select variable 6 and pulse 8 times.
  3. Remove the lid and add in the wet dates, pitted dates, vanilla and coconut.
  4. Replace the lid but remove the lid plug. Insert the tamper.
  5. Select variable 6 and pulse 35 - 40 times, using the tamper to press the ingredients into the blades.
  6. Once the mixture looks wet and begins to cake, the mixture is done.
  7. Roll mixture from the container into 1/2 ounce (15g) balls and chill before serving.
  8. Store in airtight container.
  9. Enjoy!
