What to do with your Ginger Bug

A ginger bug is a natural fermentation starter made from grated ginger, sugar, and water. It's used to create naturally carbonated beverages like ginger ale and other probiotic-rich drinks. The mixture ferments over several days, creating a fizzy, tangy base that can be added to sweetened herbal teas or fruit juices to produce homemade sodas. The ginger bug contains beneficial bacteria and yeasts, similar to those found in sourdough starter or kombucha SCOBY, which aid in the fermentation process and contribute to the health benefits of the final beverage

Using your Ginger Bug

When your ginger bug is ready (there will be bubbles forming) start by straining out some of the liquid from the ginger pieces. The liquid is what you will use as your starter for you ginger ale, root beer etc. Find the ginger ale recipe here.

Reusing and resting your Ginger Bug

Now that you have your first batch of the ginger bug starter you have two options on what to do with it. Let is sleep or let it grow.

1. Sleeping: You can allow the ginger bug to "sleep" by placing it in the fridge. You only have to feed it once a week and it can be reactivated whenever you like. While it is sleeping once a week remove it from the fridge and add 1 tablespoon ginger and 1 tablespoon sugar and leave it on your counter until it reaches room temperature. This may take a few hours. Then just place it back in the fridge. When your ready to reactivate your starter just remove it from the fridge and replace the same amount of liquid that you originally with water and start feeding it the 2 teaspoons of ginger and 2 teaspoons of sugar daily until you see bubbles forming. It is ready to remove some liquid to make a new drink.

2. Growing: You can keep feeding it daily so you can start a new batch. Just keep feeding it so you can reuse it as soon as possible. So if you removed 1/2 cup of starter just replace it with the same amount of non chlorinated, non softened water and continue to fee the ginger bug 2 teaspoons of chopped ginger and 2 teaspoons of sugar daily. It will be ready to use as a starter once it starts bubbling again.
